Georgie Porgie, pudding, pie...

I just tried a new pudding recipe that not only tastes good, but that my sweet lactose intolerant husband can eat without suffering a subsequent evening of agony.
Mexican Chocolate Tofu Pudding

Don't let the idea of tofu put you off. It doesn't taste like tofu and it doesn't taste like fake pudding. It's good in its own right. Try it. You'll like it.

In my defense, I wasn't trying to be sneaky or deceptive. I simply wanted everyone to taste it before revealing the secret ingredient so that knowledge that it contains tofu wouldn't alter the initial taste experience with negative preconceptions. Unfortunately, Rebecca didn't try her's until after you left. After her first bite, I did reveal all.

I love tofu in savory dishes...I can't wait to try it in something sweet! Does it keep well, or do you need to eat it that day?

No idea how long it would keep. We ate it all immediately, so it wasn't an issue. I can't imagine ever having enough left over that we could find out.
